If you have invited Evening Guests, who may not have attended the Wedding Ceremony, then it is often advisable to leave the first dance until the majority of the guests have arrived and suitable background music is played during this period, so that you can chat to and receive your guests and leave starting your evening until after the buffet is served.

The bride and groom usually choose the first and second track, which is usually something that is special to them and of course if liked again the track to finish the evening, be it fast or slow, I usually leave this up to them.
